My name is Collette Labey, Jersey born and Jersey bred! I am very proud to call Jersey my home and even more so now I am keeping a Jersey tradition alive.

I have been married to Mark for 33 years and about 21 years ago I started making Jersey Wonders but life got busy with working as a childminder and having a young family of my own to take care of.

Since May 2017, I returned to making Wonders and now run a little cottage business which I love! Meeting new people every day and sharing this important piece of our heritage.

The Jersey Wonder is a delicious Jersey traditional cake passed down through the generations. There is a saying that housewives used to cook their Wonders as the tide went out. If they cooked them on the incoming tide, the fat which the Wonders were cooked in would overflow the pot! Luckily for me I cook all year round whether the tide is in or out
The Jersey Wonder would probably be Jersey's equivalent to a doughnut, although Wonders are neither coated in sugar, nor filled with jam.
Years ago, depending on what end of the Island you lived in, the recipe would differ. The measurements of the butter, flour, sugar and eggs seem to vary. I have also added my own unique twist, adding two secret ingredients passed down through my family and they seem to go down a treat!
I used to love making them 18 years or so ago but then life got busy bringing up 3 young children so I reluctantly stopped but it was always my intention, when they had grown up and left the nest, that I would start again . A few years ago I went to my cousin’s house in St Peter and helped her make wonders them for Hospice. One big memory I have of that day was working as a family and people popping in to say hello and have a chat. Jersey Wonders are a great talking point and a lovely way to put a smile on a face 😊 We had so much fun that day I decided to start up again and make it into a side line business. There are two important requirements to running my home business which are Health and Hygiene, and also Fire Safety. I have gained certificates in both of these areas which has enabled me to proudly carry the “Genuine Jersey” label on my Wonders.
Originally my batch size would make 40 Wonders but now I tend to double up and make 80, sometimes 100 depending on the requirement for the day. I make the dough the night before so all orders need to be placed 24 hours before they are needed . In the morning it’s an early rise to shape and cook the Wonders. As I am sure you can imagine, I love making Wonders but the clearing up isn’t as much fun! 😊
The best way to eat your Jersey Wonder would be warm, straight out the pan although I have tried them with Nutella, and also dipped in Baileys Liqueur! Someone I know eats them with custard or even uses them as a trifle base. I try not to eat too many these days, though incredibly tempting, but I am always interested in new ways for people to enjoy this genuine treat.
